Le Brissonneau offers a unique introduction to black truffles in the heart of a genuine truffle grove, set within a former farm in the Charente region. Here, gastronomy meets nature and the passing on of tradition: visitors can gain an insight into the truffle farmer’s work, explore the truffle oaks and discover the aromas of this exceptional product.
History and origins
Le Brissonneau is based in a former farmhouse in Saint-Saturnin, just outside Angoulême. Today, the estate combines truffle production, tourist accommodation and gastronomic experiences.
Expertise
Truffle farming relies on a delicate balance between the trees, the soil, the climate and the natural conditions necessary for the truffle to develop. At Le Brissonneau, visitors explore the estate directly amongst the rows of truffle-bearing oaks, with an educational approach designed to provide a better understanding of the production cycle and the profession of the truffle farmer.
The search for truffles is carried out in particular with a truffle-hunting dog, or ‘caveur’, whose keen sense of smell enables it to locate the precious underground fungi.
In 2026, Le Brissonneau was also awarded the Clef Verte label, which recognises sustainable tourism.
Produce
- The black truffle. The estate’s flagship product, it lies at the heart of the discovery activities and experiences offered to visitors.
- Local produce. The shop also offers visitors the chance to discover and purchase other regional specialities, including honey, olive oil, Pineau des Charentes, Cognac and jams.
The signature product
The black truffle is the true cornerstone of Brissonneau. Discovering it goes beyond simply tasting it: visitors learn how it grows at the foot of oak trees, how it is harvested and why its aroma makes it a particularly sought-after product in fine dining.
To fully appreciate it, a simple tasting session allows you to better savour its aromas. It pairs naturally with eggs, potatoes, pasta, risottos, as well as certain cheeses and gourmet dishes.
The visitor’s experience
Le Brissonneau offers a truly immersive experience centred on truffles:

- a scent workshop dedicated to the aromas of truffles;

Truffle experiences are by booking only. They allow you to explore the truffle field, gain an insight into the producer’s work and round off your visit with a tasting and educational activities.
In winter, the estate also offers truffle-themed experiences that may combine a truffle brunch, a tour, a truffle-themed dinner and a visit to a local producer or artisan.

The Brissonneau truffle farm is situated on the estate itself, in Saint-Saturnin. There is also a shop where you can buy local produce after the discovery experiences.

Opening hours
There are four tour departures each day (except Saturdays), subject to booking: a tour without a tasting at 9.30 am, and tours with a tasting at 10.30 am, 2.00 pm and 4.00 pm.
Prices
- Tour with tasting: €20.
- Tour without tasting: €10.
- Children aged 7 to 11: €5.
- Free for children under 7.
