    However, the company has developed a range of activities that go beyond that of a simple butcher’s: charcuterie and homemade preserves, a rotisserie, a catering service, the sale of local produce and, more recently, the rearing of some of the pigs used in certain dishes.

    Expertise

    One of the distinctive features of Frères Allard lies in the creation of original recipes for preserves, developed by the team themselves. This approach has given rise, in particular, to the ‘Grand-Père’ pâté, the ‘Grillon Charentais’ and various charcuterie products.

    The company has also developed ‘Porcland’, a mini-farm promoted as a responsible pig-rearing facility. The animals live there in woodland, and some of the pigs reared on site are used in the company’s recipes and sold at its stalls.

    The signature product

    It’s hard to miss the ‘Grand-Père’ pâté, one of the company’s signature recipes.

    This country-style pâté is enhanced with Pineau des Charentes and Espelette chilli. Its Charente character is thus combined with a spicier and more original twist. The recipe won an award in 2022 at the International Agricultural Show.

    Enjoy it simply on country bread, as an aperitif or starter, accompanied by a few gherkins. For a truly local experience, it can also be paired with a glass of Pineau des Charentes.

    The Allard brothers have also announced the development of Porcland, their mini educational farm, with the aim of eventually welcoming the public.
